ALABAMA MUD CAKE
1 20-ounce can crushed pineapple with juice
1 21-ounce can cherry pie filling
1 18.25-ounce package devil’s food cake mix
1 cup chopped pecans
½ cup mint chocolate chips
½ cup butter, sliced
Directions:
Preheat oven to 350 degrees. Grease and flour 9 x 13 inch baking pan.
Pour pineapple with juice into prepared pan spreading evenly to make the first layer. Spread cherry pie filling over the cherry pie filling. Sprinkle the cake mix layer with pecans and mint chocolate chips, then distribute the sliced butter evenly over the top.
Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Whites of six egg
6 tablespoons powdered sugar
2 quarts vanilla Philadelphia brick ice cream
thin sheet sponge cake
1/4 teaspoonful vanilla
Meringue: beat whites of eggs until stiff and add sugar gradually while beating constantly, then add vanilla.
Cover a board with letter paper, lay on sponge cake, turn ice cream on cake, having cake extend one-fourth inch beyond cream. Cover with meringue and spread smoothly. Place on grate and brown meringue quickly in hot oven; slip from paper to serving dish.

MISSISSIPPI MUD PIE
1 c. all-purpose flour
1 stick butter
1/2 c. pecans
2 tsp. sugar
1 c. Cool Whip
8 oz. cream cheese
1 c. powdered sugar
1 tsp. vanilla
1 lg. box instant chocolate pudding
2 1/2 to 3 c. milk
Cool Whip for top
Chocolate curls or pecans
Mix and spread first 4 ingredients in 13 x 9 inch pan. Bake at 350 degrees until light brown. Mix second 4 ingredients over cooled crust. Beat and spread last 2 ingredients over second layer. Spread extra Cool Whip on top and decorate with chocolate curls or pecans.

Apple Pie?
6 cups Washington baking apple slices - peeled
1 tablespoons water
2 tablespoon lemon juice
1/2 cup sugar
1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon salt
1 Pastry for double-crust pie (9 inches)
Directions
1.In a saucepan, combine apples, water and lemon juice; cook over medium-low heat just until the apples are tender. Remove from the heat and cool (do not drain). In a large bowl, combine sugars, flour, cinnamon, nutmeg, ginger, salt and add apples and toss to coat. Place bottom pastry in pie plate; add the pie filling. Cover with top pastry; seal and crimp edges. Put slits in top crust. Bake at 450 degrees F for 10 minutes. Reduce heat to 350 degrees F; bake 40 minutes or until golden brown.

Black Forest Cake in Dutch Oven
Tiny bit of oil as necessary for the normal curing of dutch oven.
1 box of Devils Food cake mix
1 can of cherry pie filling
I can of coke or other carbonated drink like lemon-lime soda, black cherry soda etc.
Place empty Dutch oven* on about 10-12 charcoal coals, or on scattered wood burning embers. Pour in a third of the soda. Then, pour right into the center, the pie filling. Then pour in the cake mix. Lastly, pour in the rest of the soda, fairly evenly, but you do not have to stir the cake mix into a batter, like Mom might make you.
Close the dutch oven. Some people put a small stick at the lid, so steam will vent. It seems to make no difference as far as I can tell. Put 12-14 coals on the top of the oven. More if it's a windy or cold day. Less if it is hot and sunny.
Check cake in about 40 minutes. It takes forever, and is a very moist cake, so get used to a different consistency than a normal dry cake.
Can be served with whipped cream.
